  • Sea Salt

2.     Break up the caramel chocolate and add to a glass bowl. Slowly melt the chocolate over a saucepan with simmering water in it.

3.     Separate the egg whites from the yolks. You will only need 2 yolks.

4.     Whisk the egg whites until they from stiff peaks. Add half the sugar, whisk again, then add the remaining sugar and whisk until thick and glossy.

5.     Vertically brush the ramekins with melted butter.

7.     Mix in 1 tbsp of the egg white mix until smooth.

8.     Add half of the egg whites to the melted chocolate mix and gently fold together. Once combined, add the remaining egg whites and do the same until the mix is fully combined.

9.     Gently pour the chocolate mix into the prepared ramekins, level them out and then run the back of a knife around the edge of the souffle.

10. Add the soufflés to the preheated baking tray, bake in the oven for 15 minutes.

11. Carefully remove the soufflés from the oven.

12. Dust with cocoa powder and top with a tiny pinch of salt.
